Lemonade Scones


INGREDIENTS

1 cup of cream.
1 cup of lemonade.
4 cups of self raising flower.
2 teaspoons of baking powder.
A pinch of salt.

Now it's time for the way to bake the scones.

Preheat your oven to 200c.
Then stir the cream and lemonade together. Gradually add the dry ingredients to the wet mixture.
Finally roll out the wet mixture on a board and cut the mixture into how many pieces you want. Bake the pieces for 11 to 14 minutes on a floured tray.

Easy Corn Fritters


THE INGREDIENTS


1 can of sweetcorn.  
1 cup all-purpose flour.
1 tablespoon sugar.
1 teaspoon of baking powder.
2 large eggs, lightly beaten.
3/4 cup heavy cream.
Vegetable oil, for frying.

Now you know the Ingredients its time to show you how to make it.

INSTRUCTIONS 

In a large bowl, stir together the corn kernels, flour, sugar, baking powder, 1/2 teaspoon salt and 1/4 teaspoon pepper.
Stir in the eggs and heavy cream until the batter is well-combined.
Line a plate with paper towels. Coat the bottom of a large frying pan with vegetable oil and place it over medium-high heat. Once the oil is hot, scoop 2- to 3-tablespoon mounds of the corn batter into the pan, spreading it lightly into a flat, circular shape. Cook the fritters for 2 to 3 minutes, then flip them once and cook them an additional 3 minutes until they’re golden brown and cooked through. Transfer the fritters to the paper towel-lined plate, season them immediately with salt and repeat the cooking process with the remaining batter, adding more oil to the pan as needed.

crumble carmel and choclate bake

Ingredients. 
For the base.
10 dates.
1 cup of oats.
1 cup desiccated coconut.
6 table spoons of coconut oil or butter.

For the caramel Sauce.
3/4 cup of golden or maple syrup.
60g butter
Can of condensed milk.

For the chocolate topping.
1/2 bar Chocolate (we used left over Easter egg).
1 teaspoon of veggie oil.

Now that's done your probably wondering how to make it with these ingredients.
1. Just cover the dates in water and heat for 5 minutes until soft.
2. Mix the oats, dates and desiccated coconut in a bowl then stir in the coconut oil.
3. Spread the mixture in a dish and bake the mixture in the oven for 10 minutes.
4. To make the caramel sauce heat the golden syrup and butter in a pan until the butter melts and finally add the condensed milk.
5. Cover the oat mixture with the caramel sauce and then bake for 10 minutes.
6. Melt the chocolate over boiling water in a bowl.
7. Add 1 teaspoon of veggie oil to the chocolate.
8. Spread the melted chocolate over the baked oat and caramel dish.
9. Put the dish in the fridge for 30 minutes or until hard.
10. Eat it

making fish cakes

Today mum and I made some fish cakes here's the ingredients;
400g fresh salmon fillets.
400g cooked potato.
50g frozen peas defrosted.
150g fresh breadcrumbs.
4 tea spoons chopped parsley.
2 eggs.
A splash of sunflower oil.
250ml reduced fat mayonnaise.
Grated zest and juice of 1/2 lemon.

Equipment
Medium saucepan or frying pan with lid.
4 mixing bowls.
3 metal spoons.
Plate.
Flipper.

Now you know the ingredients you're probably wondering how to make the fish cakes.

1. Place the fish in the pan. Add a little water, and cook for 5-6 minutes. allow to cool, then flake, removing any skin and bones.
2. Boil the potatoes and place the potato, peas and salmon in a bowl. Mix gently until combined and season to taste.
3. Mix the breadcrumbs with the parsley and place on a plate.
4. Place a heaped teaspoon of the salmon mixture in your hands, roll the mixture into a ball, then flatten the mixture. Dip the mixture into the egg, then coat in the breadcrumb mixture.
5. Heat a little oil in a frying pan and shallow fry the fish cakes for 2 to 3 minutes each side until golden.
6. Mix together the mayonnaise with the lemon zest and juice. Transfer to a bowl. serve the fish cakes warm or cold with the dip.

That's all the things you need to do and if you're wondering why my fish cakes look bad its because me and mum messed up a bit.

book review

My class has been reading a book every day and once we have read the book we write what the book was about. Here do you want to see one of the books I read.



The Tiger Who Came To Tea
The book was made by Judith Kerr
The main characters are Sophie and the other main character is the tiger.
I recommend reading this book. It is a pretty good book. I like how the tiger ate everything.

Sophie decided to have a tea party one day but then someone was knocking on the door. Sophie's mum wandered who it could be. Once Sophie's mum opened the door there was a big tiger who asked if he could have tea with them. The tiger ate all the tea party food but the tiger was still hungry so the tiger ate all the food in the fridge and all the food in the cupboard. Once the tiger ate all of that there was no more food left in the house so Sophie offered the tiger some milk. The tiger ended up drinking all the milk, all the tea in the teapot and all the tap water. When Sophie's dad got back Sophie told her dad all about what happened. Sophie's dad got the idea to eat at the cafe. Tomorrow Sophie and her mum went shopping and they bought a big tin of tiger food just in case the tiger came back but he never did.

Home made pizza for lunch

Today I made a pizza at home. We always use traditional Italian toppings. The most usual toppings in Italian pizzas are: olives, pepperoni and capers. How to make a homemade pizza; first get a tortilla for the base then get a knife and tomato paste. Spread the tomato paste all over the tortilla. Then get some cheese and lay the cheese all over the tomato paste. Finally put any topping on that you want. Then cook it in the oven for 5-10 minutes until it's crispy and bubbly on top. The toppings I used were pepperoni, olives and capers because I like the taste and we had these in the fridge.

baking cupcakes with my mum

To bake these cupcakes you will need 2 eggs, an orange, a cup and a half of flour, 70 grams of lemon curd and 1/3 cup of caster sugar. The recipe is for making a cake but we put our batter into cupcake moulds and made them into cupcakes. Me and mum also changed the recipe a bit because we didn't have all the ingredients in the recipe. We used 2 lemons instead of 1 orange. We made our own flour by blitzing almonds in the blender and the caster sugar was substituted for brown sugar. Now i'm going to tell you the method of making the cake. Begin by placing the whole orange unpeeled in a pan of boiling water - make sure there's enough water to completely cover the orange - and simmer for at least an hour until the fruit is tender and cooked all the way through. Remove from the heat, drain and leave the orange aside until it is cool enough to handle. Grease and flour a 20 cm (8 in) spring form cake tin, lining the bottom with baking paper. Preheat the oven to 170c. Once the orange has cooled cut it into 8 segments, removing any pips. Put the orange skin and all into the cup of your blender and blitz to a pulp. Add the eggs, followed by the ground almonds, lemon curd then the sugar and blitz again until everything is incorporated into a smooth mixture. Pour the batter into the prepared tin and bake in the oven for 40 minutes. Check the cake is cooked by inserting a skewer - if it comes out clean the cake is done. Remove from the oven and leave to cool in the tin.
